Cook! is the brainchild of Nona Lim, a Singapore native who began cooking with her father at age five. She also credits her hometown love of 'hawker centers' – food stalls dishing up various Asian street foods – as a definitive culinary influence. Her fanatical home cooking has always valued high quality ingredients and simple, quick preparations. It was never Nona Lim's intention to launch California's first gluten- and diary-free meal service. But sometimes the best ideas are born of simple necessity. It's no surprise that the Singapore native would find her way back to the kitchen following a successful business consulting career in London. After all, Nona began cooking in her father's kitchen at age five with a heavy dose of inspiration from the bevvy of hawker stalls dishing up sumptuous Asian streetfoods—the crazy stuff of Anthony Bourdain's "No Reservations." Soon after launching Cook!, Nona started paying attention to the growing dialogue on food sensitivities and an unhealthy gut (intestinal tract) as the underlying cause for so much that ails Americans. | At the urging of Cook! adviser and internal medicine physician, Dr. Neha Sangwan, Nona began testing allergen-free recipes based on the healing protocol of Dr. Mark Hyman, a leader in the field of functional medicine. Dr. Hyman's best-sellers include Ultra-metabolism Diet, Ultra-Simple Diet and Ultra-Mind. Dr. Hyman helped Nona discover her own sensitivities to dairy and gluten, and taught her how different foods can be powerful healing agents or quite destructive. The Cook! test kitchen went into overdrive. Clean eating became the mantra and hundreds of recipes were developed without common allergens like wheat and dairy. The results were remarkable and literally occurred overnight—people slept better, enjoyed taut skin, got rid of dark circles under their eyes and felt more energized! It was essential that taste not be compromised. The driving success behind Cook! has always been what's on the end of the fork. Today, Nona and the team continue to turn out delicious recipes, tested until flawless, and inspired by awesome restaurants, chefs, friends, and customers. What began as an experiment with a half dozen customers eating a week-long meal plan based on Dr. Hyman's Ultra-metabolism diet is now Cook!'s most popular program. When not behind the stove, Nona is President of the San Francisco Professional Food Society (2012), where she organizes discussions on sustainable food and cooking. Nona is also a competitive fencer and has represented her native country, Singapore, in many World Cup tournaments. She is currently captain of the Singapore national women's sabre fencing team. |
